  • 1 can (15 oz) Black beans
  • 2 minced Garlic cloves
  • 1 teaspoon Chili powder
  • 1 tablespoon Lime juice
  • 4 large Tortillas
  • 1 cup Shredded cheddar cheese
  • 1 sliced Avocado
  • 2 tablespoons Fresh cilantro
  • 4 tablespoons Sour cream

Directions

Step 1

Preheat your oven to 400°F (200°C).

Peel and dice the sweet potatoes into small, bite-sized cubes.

Toss the sweet potatoes with 1 tablespoon of olive oil, ground cumin, smoked paprika, and half of the salt. Spread them out in a single layer on a baking sheet.
