Ingredients

  • 2 pieces chicken breast
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 3 cloves garlic cloves, minced
  • 2 cups heavy cream
  • 1.5 cups Parmesan cheese, freshly grated
  • 12 ounces fettuccine pasta
  • 2 tablespoons fresh parsley, chopped (optional)
  • 1 gallon water (for boiling pasta)
  • 1 tablespoon salt (for pasta water)

Directions

Step 1

Season the chicken breasts on both sides with salt, black pepper, and garlic powder.

Step 2

Heat olive oil in a large skillet over medium heat. Cook the chicken breasts for 6-7 minutes per side or until golden brown and fully cooked (internal temperature of 165°F). Remove from the skillet and set aside. Let rest for 5 minutes, then slice into strips.

Step 3

In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.

Step 4

Slowly pour the heavy cream into the skillet while stirring. Bring to a gentle simmer and cook for 3-4 minutes, allowing the sauce to thicken slightly.

Step 5

Add the freshly grated Parmesan cheese in small handfuls, stirring constantly to achieve a smooth and creamy consistency. Turn the heat to low and keep the sauce warm.

Step 6

Cook the fettuccine pasta in a large pot of boiling salted water according to package instructions (usually 10-12 minutes) until al dente. Reserve 1/2 cup of pasta water before draining.

Step 7

Combine the cooked pasta with the Alfredo sauce in the skillet. Toss to coat the pasta evenly. If the sauce is too thick, add the reserved pasta water, 1 tablespoon at a time, until desired consistency is reached.

Step 8

Add the sliced chicken back to the skillet, placing it on top of the pasta. Allow it to warm through for 1-2 minutes.

Step 9

Garnish with chopped fresh parsley if desired. Serve immediately and enjoy!
