Ingredients

  • 1 cup (2 sticks) unsalted butter
  • 0.5 cup granulated sugar
  • 2 cups all-purpose flour
  • 1.5 cups granulated sugar
  • 0.25 cup all-purpose flour
  • 4 large eggs
  • 0.67 cup freshly squeezed lemon juice
  • 0.25 cup powdered sugar (optional, for dusting)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking pan with non-stick spray or line it with parchment paper, leaving an overhang for easy removal.

Step 2

In a medium mixing bowl, combine 1 cup of unsalted butter (softened), 0.5 cup of granulated sugar, and 2 cups of all-purpose flour. Stir until the mixture forms a crumbly dough.

Step 3

Press the shortbread dough evenly into the prepared baking pan to create a firm crust. Use the back of a spoon or your hands to smooth it out.

Step 4

Bake the crust in the preheated oven for 15-20 minutes, or until it turns a light golden brown. Remove from the oven and set aside to cool slightly.

Step 5

While the crust cools, prepare the lemon filling. In a separate bowl, whisk together 1.5 cups of granulated sugar, 0.25 cup of all-purpose flour, 4 large eggs, and 0.67 cup of freshly squeezed lemon juice until smooth and well combined.

Step 6

Pour the lemon filling over the baked crust, spreading it evenly with a spatula.

Step 7

Return the pan to the oven and bake for an additional 20-25 minutes, or until the filling is set and no longer jiggles in the center.

Step 8

Remove the lemon bars from the oven and let them cool completely in the pan, about 2 hours. For faster cooling, place the pan in the refrigerator for 1 hour.

Step 9

Once cooled, use the parchment paper overhang to lift the bars out of the pan. Transfer to a cutting board and cut into 12 squares or rectangles.

Step 10

Dust the tops of the lemon bars with powdered sugar (optional) for a decorative finish. Serve and enjoy!
