Ingredients

  • 3 cups rolled oats
  • 1 cup chopped almonds
  • 0.5 cup pumpkin seeds
  • 0.5 cup sunflower seeds
  • 0.5 cup shredded unsweetened coconut
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon kosher salt
  • 0.5 cup honey or maple syrup
  • 0.25 cup coconut oil (melted) or olive oil
  • 1 teaspoon vanilla extract
  • 0.5 cup dried fruit (e.g., cranberries or raisins)

Directions

Step 1

Preheat your oven to 325°F (160°C) and line a large baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the rolled oats, chopped almonds, pumpkin seeds, sunflower seeds, shredded coconut, ground cinnamon, and kosher salt. Stir until evenly mixed.

Step 3

In a small saucepan over low heat (or in the microwave), gently warm the honey or maple syrup and coconut oil until melted. Remove from heat and stir in the vanilla extract.

Step 4

Pour the wet mixture over the dry ingredients in the mixing bowl. Use a spatula to stir everything together until the dry ingredients are evenly coated.

Step 5

Spread the granola mixture in an even layer on the prepared baking sheet.

Step 6

Bake in the preheated oven for 20-25 minutes, stirring halfway through to ensure even baking. Keep an eye on it towards the end to prevent burning; the granola should be golden brown.

Step 7

Remove the granola from the oven and let it cool completely on the baking sheet. As it cools, it will crisp up.

Step 8

Once cooled, mix in the dried fruit of your choice.

Step 9

Store the granola in an airtight container at room temperature for up to 2 weeks. Serve it with yogurt, milk, or enjoy it as a snack on its own!
