Rinse the lentils under cold water in a fine-mesh sieve, ensuring no debris remains. Set aside.
In a medium saucepan, bring 4 cups of water to a boil. Add the lentils and cook for 20 minutes over medium heat, until they are tender but still firm. Drain and set aside.
While the lentils are cooking, peel the onions and slice them thinly into half-moons.
Heat a large skillet or frying pan over medium heat and add 3 tablespoons of olive oil. Once hot, add the sliced onions and cook, stirring frequently, for 15-20 minutes until deeply caramelized and golden brown. Remove half of the caramelized onions and set aside for garnish.
Add the remaining tablespoon of olive oil to the skillet with the remaining onions. Stir in the cumin, cinnamon, salt, and black pepper, and cook for 1 minute to bloom the spices.

Remove the skillet from the heat and let it sit, covered, for 5 minutes to steam.
Fluff the rice and lentil mixture with a fork, then transfer it to a serving dish. Top with the reserved caramelized onions and a sprinkle of fresh parsley, if desired.
