  • 1 cup Brown lentils
  • 1 cup Long-grain rice
  • 2 large Yellow onion
  • 4 tablespoons Olive oil
  • 1 teaspoon Ground cumin
  • 0.5 teaspoons Ground cinnamon
  • 1.5 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 4 cups Water
  • 2 tablespoons Fresh parsley (optional, for garnish)

Directions

Step 1

Rinse the lentils under cold water in a fine-mesh sieve, ensuring no debris remains. Set aside.

Step 2

In a medium saucepan, bring 4 cups of water to a boil. Add the lentils and cook for 20 minutes over medium heat, until they are tender but still firm. Drain and set aside.

Step 3

While the lentils are cooking, peel the onions and slice them thinly into half-moons.

Heat a large skillet or frying pan over medium heat and add 3 tablespoons of olive oil. Once hot, add the sliced onions and cook, stirring frequently, for 15-20 minutes until deeply caramelized and golden brown. Remove half of the caramelized onions and set aside for garnish.
