Ingredients

  • 2 cups canned white beans
  • 1 medium red onion
  • 2 tablespoons balsamic vinegar
  • 3 tablespoons extra virgin olive oil
  • 1 cup fresh parsley
  • 1 tablespoon lemon juice
  • 1 cup cherry tomatoes
  • 1 medium cucumber
  • 0.5 cup feta cheese
  • 1 clove garlic
  • 1 teaspoon dried oregano
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Drain and rinse the canned white beans under cold water. Place them in a large mixing bowl and set aside.

Finely dice the red onion. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the diced red onion and a pinch of salt. Cook, stirring occasionally, for 10-12 minutes until the onions are soft and caramelized.
