Ingredients

  • 425 grams Canned chickpeas (drained and rinsed)
  • 100 grams Rolled oats
  • 0.5 medium Red onion (finely diced)
  • 15 grams Fresh parsley (chopped)
  • 10 grams Fresh cilantro (chopped)
  • 2 cloves Garlic cloves (minced)
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Fresh lemon juice
  • 2 tablespoons Olive oil
  • 50 grams Sun-dried tomatoes (finely chopped)
  • 30 grams All-purpose flour (or gluten-free substitute)
  • 4 pieces Burger buns (vegan)
  • 0 Optional toppings: lettuce, tomato slices, cucumber, vegan tzatziki sauce

Directions

Step 1

1. In a food processor, pulse the rolled oats until they are a coarse flour consistency. Transfer to a large mixing bowl.

2. Add the chickpeas to the food processor and pulse until they are roughly mashed. Avoid over-processing; you want a mixture with some texture. Transfer to the mixing bowl with the oats.

3. Add the finely diced red onion, fresh parsley, fresh cilantro, minced garlic, ground cumin, ground paprika, salt, black pepper, and sun-dried tomatoes to the bowl.
