Ingredients

  • 4 pieces Tilapia fillets
  • 0.75 cups Raw cashews
  • 0.5 cups Panko breadcrumbs
  • 0.25 cups Parmesan cheese
  • 1 teaspoon Garlic powder
  • 0.5 teaspoons Smoked paprika
  • 1 teaspoon Salt
  • 0.5 teaspoons Freshly ground black pepper
  • 2 large Eggs
  • 0.5 cups All-purpose flour
  • 3 tablespoons Olive oil
  • 3 tablespoons Unsalted butter
  • 2 tablespoons Fresh lemon juice
  • 0.5 cups Chicken or vegetable stock
  • 2 tablespoons Fresh parsley
  • 1 teaspoon Lemon zest

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or lightly grease it.

Step 2

In a food processor, pulse the cashews until they are finely chopped but not powdery.

Step 3

In a medium bowl, combine the finely chopped cashews, panko breadcrumbs, Parmesan cheese, garlic powder, smoked paprika, salt, and black pepper. Mix well and set aside.
