Ingredients

  • 2 cups cooked or canned chickpeas
  • 2 cups cooked or canned cannellini beans
  • 2 medium zucchini
  • 1 medium eggplant
  • 1 large red bell pepper
  • 1 large yellow onion
  • 4 cloves garlic cloves
  • 1 14-ounce can canned diced tomatoes
  • 2 tablespoons tomato paste
  • 3 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon ground cumin
  • 0.5 teaspoon smoked paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup fresh parsley (for garnish)

Directions

Step 1

Rinse and drain the chickpeas and cannellini beans if using canned. Set aside.

Step 2

Wash and chop the zucchini, eggplant, and red bell pepper into bite-sized pieces. Dice the yellow onion and mince the garlic cloves.

In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and minced garlic and sauté for 3-4 minutes until softened and fragrant.
