Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper or lightly grease it.
Butterfly the pork tenderloin by slicing it lengthwise down the center, being careful not to cut all the way through. Open the meat like a book and pound it evenly to about 1/2 inch thickness using a meat mallet.
Season the pork tenderloin with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Set aside.
In a food processor, combine the pitted Kalamata olives, capers, garlic, parsley, lemon juice, and olive oil. Pulse until the mixture forms a coarse paste, creating the tapenade.
Spread the tapenade evenly over the butterflied pork tenderloin, leaving a 1-inch border along the edges.
Lay the fresh spinach leaves evenly over the tapenade layer.
Starting from one long end, tightly roll up the pork tenderloin into a cylinder. Secure the roll with kitchen twine, tying it in four evenly spaced sections to hold its shape.
Season the outside of the pork roll with the remaining 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.
Heat a large oven-safe skillet over medium-high heat. Sear the pork roll on all sides for about 2 minutes per side, or until browned.
Transfer the skillet (or place the pork roll on the prepared baking sheet if not using an oven-safe skillet) into the preheated oven. Bake for 20-25 minutes, or until the internal temperature of the pork reaches 145°F (63°C).
Remove the pork roll from the oven and let it rest for 5 minutes before slicing into 1-inch thick pieces.
