Ingredients

  • 4 pieces (6 oz each) Mahi Mahi fillets
  • 4 tablespoons Extra-virgin olive oil
  • 2 tablespoons Lemon juice
  • 2 cloves Garlic cloves
  • 2 medium Shallots
  • 0.5 cup Kalamata olives, pitted and chopped
  • 3 tablespoons Capers, rinsed
  • 3 tablespoons Fresh parsley, chopped
  • 1 tablespoon Fresh oregano, chopped
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Paprika
  • 1 cup Cherry tomatoes, halved

Directions

Step 1

Rinse the Mahi Mahi fillets under cold water, then pat dry with paper towels. Set aside on a plate.

Step 2

In a small bowl, combine 2 tablespoons of olive oil, 1 tablespoon of lemon juice, minced garlic, salt, black pepper, and paprika. Whisk to create a marinade.

Step 3

Brush the marinade evenly over both sides of the Mahi Mahi fillets. Set aside to marinate for 10 minutes while you prepare the tapenade.
