Ingredients

  • 4 pieces Chicken thighs (bone-in, skin-on)
  • 3 tablespoons Lemon juice
  • 1 teaspoon Lemon zest
  • 3 cloves Garlic cloves (minced)
  • 2 tablespoons Olive oil
  • 1 teaspoon Dried oregano
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 0.5 cups Chicken broth
  • 2 tablespoons Fresh parsley (chopped)
  • 4 slices Lemon slices (for garnish)

Directions

Step 1

In a small bowl, whisk together the lemon juice, lemon zest, minced garlic, 1 tablespoon of olive oil, dried oregano, paprika, salt, and black pepper to create the marinade.

Step 2

Place the chicken thighs in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring that each piece is well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes or up to 2 hours for maximum flavor.

Step 3

Preheat your oven to 400°F (200°C).

Step 4

Heat the remaining 1 tablespoon of olive oil in a large oven-safe skillet over medium-high heat.

Step 5

Remove the marinated chicken thighs from the bag, allowing any excess marinade to drip off, and carefully place them skin-side down in the hot skillet.

Step 6

Sear the chicken for 3-4 minutes on each side, or until the skin is golden brown.

Step 7

Pour the chicken broth into the skillet around the chicken thighs, being careful not to pour it directly over the crispy skin.

Step 8

Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).

Step 9

Remove the skillet from the oven and let the chicken rest for 5 minutes before serving.

Step 10

Sprinkle the chicken with chopped parsley and garnish with lemon slices. Serve warm with your favorite sides, such as roasted vegetables, rice, or a fresh salad.
