Ingredients

  • 4 medium Russet potatoes
  • 1 medium Yellow onion
  • 2 large Eggs
  • 4 tablespoons All-purpose flour
  • 1 cup Feta cheese, crumbled
  • 0.3333 cup Sun-dried tomatoes, finely chopped
  • 0.25 cup Fresh parsley, chopped
  • 2 tablespoons Fresh dill, chopped
  • 2 Garlic cloves, minced
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 cup Olive oil
  • 1 cup Greek yogurt or tzatziki (optional, for serving)

Directions

Step 1

Peel and grate the potatoes using a box grater. Place the grated potatoes in a clean kitchen towel and squeeze out as much liquid as possible. This step is crucial to achieve crispy latkes.

Step 2

Grate the onion and add it to the squeezed potatoes in a large mixing bowl.

Step 3

Add the eggs, flour, crumbled feta cheese, sun-dried tomatoes, parsley, dill, minced garlic, salt, and pepper to the bowl. Mix well until all ingredients are evenly combined.

Step 4

Heat 1-2 tablespoons of olive oil in a large non-stick skillet over medium heat.

Step 5

Scoop about 1/4 cup of the potato mixture into the skillet and flatten into a 3-inch pancake using the back of a spoon. Repeat until the skillet is full, leaving space between each latke.

Step 6

Cook the latkes for 3-4 minutes on each side, or until golden brown and crispy. Remove and transfer to a paper towel-lined plate to drain excess oil.

Step 7

Repeat with the remaining potato mixture, adding more oil to the skillet as needed.

Step 8

Serve the Mediterranean latkes warm with a dollop of Greek yogurt or tzatziki on top, if desired.
