  • 6 cups chicken broth
  • 2 15-ounce cans canned white beans (such as cannellini or great northern), drained and rinsed
  • 4 cups kale, stems removed and leaves chopped
  • 1 14-ounce can diced tomatoes with juice
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 0.5 teaspoon smoked paprika
  • 0.25 teaspoon red pepper flakes
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup parmesan cheese, grated
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Add the Italian sausage and cook until browned, breaking it apart with a wooden spoon, about 5-7 minutes. Remove the sausage from the pot and set aside, leaving the rendered fat in the pot.
