Ingredients

  • 12 oz Fettuccine pasta
  • 8 oz Italian sausage (mild or spicy)
  • 2 tbsp Olive oil
  • 3 pieces Garlic cloves, minced
  • 1 medium Red onion, thinly sliced
  • 0.33 cup Sun-dried tomatoes in oil, chopped
  • 4 cups Fresh spinach leaves
  • 0.5 cup Feta cheese, crumbled
  • 0.5 cup Heavy cream
  • 0.25 cup Chicken broth
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 2 tbsp Fresh basil leaves, chopped
  • 0.25 cup Parmesan cheese, grated (optional for topping)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the fettuccine pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.

Step 2

While the pasta is cooking, heat 1 tablespoon of olive oil in a large skillet over medium heat. Remove the casings from the Italian sausage (if applicable) and crumble the sausage into the skillet. Cook for 5-7 minutes, stirring occasionally, until browned and fully cooked. Transfer the sausage to a plate and set aside.

Step 3

In the same skillet, add the remaining 1 tablespoon of olive oil. Add the minced garlic and sliced red onion, cooking for 2-3 minutes until the onions are softened and fragrant.

Stir in the chopped sun-dried tomatoes and cook for another 1 minute.
