Ingredients

  • 6 medium-sized Tomatillos
  • 2 whole Green chilies (such as jalapeño or serrano, depending on spice preference)
  • 2 whole Garlic cloves
  • 1 cup Cilantro leaves (fresh)
  • 2 tablespoons Extra virgin olive oil
  • 2 tablespoons Fresh lime juice
  • 0.5 medium-sized Red onion
  • 0.5 teaspoons Ground cumin
  • 0.5 teaspoons Sea salt
  • 0.25 teaspoons Black pepper
  • 2 tablespoons Water (optional for desired consistency)

Directions

Step 1

Preheat a skillet or grill pan over medium heat.

Step 2

Peel and rinse the tomatillos to remove their papery husks. Add them to the heated skillet along with the whole green chilies and garlic cloves.

Step 3

Char the tomatillos, green chilies, and garlic for 8-10 minutes, turning occasionally, until they develop a nice char on the outside and begin to soften.

Once charred, remove the ingredients from the heat and allow them to cool for 5 minutes before handling.

Roughly chop the red onion and set it aside.
