  • 2.25 teaspoons Active dry yeast

  • 3 cups Unbleached all-purpose flour or whole wheat flour

  • 3 tablespoons Za'atar seasoning
  • 1 tablespoon Sesame seeds (optional)
  • 1 tablespoon Extra olive oil (for brushing)

Directions

Step 1

In a large mixing bowl, combine the warm water, active dry yeast, and honey or maple syrup. Let it sit for 5-10 minutes until the mixture becomes frothy.

Add 2 tablespoons of olive oil, salt, and 2.5 cups of the flour to the yeast mixture. Mix until a sticky dough forms.

Gradually add the remaining 0.5 cup of flour, a little at a time, until the dough comes together and is soft but not overly sticky.

Transfer the dough onto a floured surface and knead for 8-10 minutes until smooth and elastic. Alternatively, use a stand mixer fitted with a dough hook and knead for 5-6 minutes.
