Ingredients

  • 2 tablespoons olive oil
  • 1 medium, diced yellow onion
  • 3 minced garlic cloves
  • 2 chopped celery stalks
  • 2 medium, chopped zucchini
  • 3 cups broccoli florets
  • 3 cups, chopped kale
  • 6 cups vegetable broth
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 1 tablespoon lemon juice
  • 0.25 cup, chopped fresh parsley
  • 0.25 teaspoons optional: red pepper flakes

Directions

Step 1

Heat olive oil in a large pot over medium heat.

Step 2

Add the diced yellow onion and cook for 3-4 minutes until softened.

Step 3

Stir in the minced garlic and chopped celery, cooking for another 2 minutes while stirring frequently.

Step 4

Add the chopped zucchini, broccoli florets, and vegetable broth to the pot. Bring the mixture to a boil.

Step 5

Reduce heat to a simmer and cook for 10 minutes, or until the broccoli and zucchini are tender.

Step 6

Add the chopped kale, salt, and black pepper to the pot. Stir and cook for an additional 5 minutes, allowing the kale to wilt.

Stir in the lemon juice and adjust seasoning as needed.

Step 9

Ladle the soup into bowls and garnish with fresh parsley and optional red pepper flakes for a hint of spice.

Step 10

Serve warm and enjoy!
