Ingredients

  • 1 lb Ground turkey (93% lean)
  • 0.5 cup Red onion, finely chopped
  • 2 cloves Garlic cloves, minced
  • 0.25 cup Sun-dried tomatoes, chopped
  • 0.25 cup Kalamata olives, chopped
  • 0.25 cup Fresh parsley, chopped
  • 1 cup Fresh spinach, roughly chopped
  • 0.25 cup Feta cheese, crumbled
  • 1 large Egg
  • 0.5 cup Whole-wheat breadcrumbs
  • 1 tbsp Olive oil
  • 1 tsp Lemon zest
  • 1 tsp Dried oregano
  • 0.5 tsp Ground cumin
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 2 tbsp Tomato paste

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a loaf pan or baking sheet with a bit of olive oil.

Step 2

In a large mixing bowl, combine the ground turkey, chopped red onion, minced garlic, chopped sun-dried tomatoes, chopped Kalamata olives, parsley, spinach, and crumbled feta cheese.

Add the egg, whole-wheat breadcrumbs, olive oil, lemon zest, dried oregano, ground cumin, salt, and black pepper to the bowl.
