Ingredients

  • 6 pieces Garlic cloves
  • 0.5 teaspoons Salt
  • 2 tablespoons Lemon juice, freshly squeezed
  • 1 cup Neutral oil (such as grapeseed or sunflower oil)
  • 2 tablespoons Ice water

Directions

Step 1

Peel the garlic cloves and slice them in half lengthwise. Remove the green germ (if present) to reduce bitterness.

Step 2

Place the garlic and salt into a food processor or blender. Pulse until the garlic is finely minced, scraping down the sides of the bowl as needed.

Step 3

Add 1 tablespoon of lemon juice and 1 tablespoon of neutral oil to the blender. Blend on low speed until the mixture begins to emulsify.

Step 4

Continue blending, alternating between slowly drizzling in the oil and adding small amounts of lemon juice. Allow the mixture to blend for 30 seconds between additions to achieve a creamy consistency.

Step 5

Once all the lemon juice and oil are added, check the texture. If the sauce is too thick, add the ice water 1 tablespoon at a time, blending after each addition, until you reach your desired consistency.

Step 6

Taste and adjust seasoning as needed with more salt or lemon juice, if desired.

Step 7

Transfer to an airtight container and refrigerate for at least 1 hour to let the flavors meld. The sauce will thicken slightly as it chills.

Step 8

Serve cold or at room temperature. Enjoy as a dip, condiment, or spread!
