Ingredients

  • 2 tablespoons olive oil
  • 1 medium, finely chopped yellow onion
  • 3 minced garlic cloves
  • 4 medium, grated or finely chopped ripe tomatoes
  • 1 tablespoon tomato paste
  • 1 cup long-grain white rice
  • 2 cups vegetable broth
  • 1 teaspoon dried oregano
  • 0.25 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons, chopped fresh parsley
  • 2 tablespoons, chopped (optional) fresh basil

Directions

Step 1

Heat the olive oil in a large skillet or saucepan over medium heat.

Step 2

Add the finely chopped onion and sauté for 3-4 minutes until translucent.

Stir in the minced garlic and cook for another minute until fragrant.

Add the grated or finely chopped tomatoes to the pan along with the tomato paste. Cook for 5 minutes, stirring frequently, until the tomatoes break down and form a sauce.
