Ingredients

  • 2 English cucumbers
  • 1 teaspoon Sea salt
  • 2 tablespoons Rice vinegar
  • 1 tablespoon Extra virgin olive oil
  • 1 teaspoon Honey
  • 1 teaspoon Soy sauce (low sodium)
  • 1 clove Garlic (minced)
  • 1 tablespoon Sesame seeds (toasted)
  • 1 tablespoon Fresh dill (finely chopped)
  • 2 Scallions (thinly sliced)

Directions

Step 1

Wash and dry the cucumbers. Slice them into thin rounds using a mandoline or sharp knife.

Step 2

Place the cucumber slices in a colander set over a bowl. Sprinkle with sea salt, toss gently, and let sit for 10 minutes to draw out excess water.

Step 3

While the cucumbers are resting, prepare the dressing by whisking together rice vinegar, olive oil, honey, soy sauce, and minced garlic in a small bowl.

Step 4

Rinse the cucumbers under cold water to remove excess salt, then gently pat them dry with a clean kitchen towel or paper towels.

Step 5

In a large mixing bowl, combine the cucumbers with the dressing. Toss well to coat evenly.

Step 6

Add the toasted sesame seeds, fresh dill, and scallions to the cucumbers. Gently toss again to distribute the herbs and seeds.

Step 7

Transfer the cucumber salad to a serving dish and chill in the refrigerator for at least 10 minutes before serving.

Step 8

Serve cold as a refreshing appetizer or side dish. Enjoy!
