Ingredients

  • 8 oz Whole grain spaghetti or soba noodles
  • 3 tbsp Extra virgin olive oil
  • 3 cloves Garlic, minced
  • 0.5 Red onion, thinly sliced
  • 1 Red bell pepper, thinly sliced
  • 1 medium Zucchini, julienned or thinly sliced
  • 1 cup Cherry tomatoes, halved
  • 0.25 cup Kalamata olives, sliced
  • 2 cups Baby spinach
  • 1 tsp Dried oregano
  • 0.5 tsp Crushed red pepper flakes (optional)
  • 1 Lemon, juiced
  • 2 tbsp Fresh parsley, chopped
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

Directions

Step 1

Cook the whole grain spaghetti or soba noodles according to the package instructions. Drain, rinse under cold water, and set aside.

Step 2

Heat 2 tablespoons of extra virgin olive oil in a large skillet or wok over medium heat.

Step 3

Add the minced garlic and cook for 30 seconds until fragrant, being careful not to let it burn.

Add the red onion, red bell pepper, and zucchini to the skillet. Stir-fry for 4-5 minutes until the vegetables start to soften.
