Ingredients

  • 500 grams lean steak (sirloin or flank)
  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic cloves, minced
  • 150 grams baby spinach, fresh
  • 100 grams crumbled feta cheese
  • 100 grams low-fat ricotta cheese
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 8 sheets phyllo dough sheets
  • 4 tablespoons olive oil for brushing
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Preheat your oven to 190°C (375°F).

Step 2

Heat 2 tablespoons of olive oil in a skillet over medium heat. Add the diced onion and cook until softened, about 3-4 minutes.

Add the minced garlic and cook for an additional minute until fragrant.

Step 4

Increase the heat to medium-high and add the lean steak, cut into small bite-sized pieces. Cook for 5-7 minutes until browned on the outside. Remove the skillet from heat.

Stir in the ground cumin, ground coriander, smoked paprika, salt, and black pepper. Mix well to coat the steak.

Prepare the second set of 4 phyllo sheets in the same manner (layering and brushing with olive oil), then place them on top of the pie to seal it completely. Tuck in the edges and brush the top layer with olive oil.

Using a sharp knife, score the top layer of the pie with diagonal cuts to create a diamond pattern (this helps release steam).
