Ingredients

  • 400 grams Squid ink pasta
  • 3 tablespoons Extra virgin olive oil
  • 3 units Garlic cloves, thinly sliced
  • 200 grams Cherry tomatoes, halved
  • 100 grams Kalamata olives, pitted and halved
  • 2 tablespoons Capers, rinsed
  • 1 teaspoon Lemon zest
  • 2 tablespoons Fresh parsley, finely chopped
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper, freshly ground
  • 1 tablespoon Lemon juice (optional, for serving)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the squid ink pasta and cook according to the package instructions, until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set it aside.

Step 2

While the pasta cooks, heat the extra virgin olive oil in a large skillet over medium heat.

Add the sliced garlic to the skillet and sauté for 1-2 minutes until fragrant but not browned.
