Preheat the oven to 375°F (190°C). Grease a 9x13-inch casserole dish with 1 tablespoon of olive oil.
In a large skillet, heat the remaining 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté for 4-5 minutes, or until softened. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
