Ingredients

  • 14 ounces extra-firm tofu
  • 2 tablespoons olive oil
  • 1 medium (diced) yellow onion
  • 4 minced garlic cloves
  • 1 (diced) red bell pepper
  • 1 medium (diced) zucchini
  • 14 ounces (1 can) crushed tomatoes
  • 4 cups vegetable broth
  • 1 tablespoon harissa paste
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 4 cups (chopped) kale or spinach
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 2 tablespoons lemon juice
  • 2 tablespoons (chopped for garnish) fresh parsley

Directions

Step 1

Drain and press the tofu to remove extra liquid. Cut it into 1/2-inch cubes and set aside.

Step 2

Heat 1 tablespoon of olive oil in a large pot over medium heat. Add the diced onion and cook for 3-4 minutes until softened.

Add the minced garlic and diced red bell pepper, cooking for another 2 minutes until fragrant.
