Ingredients

  • 200 grams Imitation crab meat or cooked lump crab meat
  • 4 pieces Whole-grain tortilla wraps
  • 60 grams Greek yogurt
  • 1 tablespoon Olive oil
  • 1 tablespoon Lemon juice
  • 2 tablespoons Fresh parsley leaves, finely chopped
  • 1 clove Garlic, minced
  • 100 grams Cucumber, julienned
  • 100 grams Carrot, julienned
  • 40 grams Arugula leaves
  • 1 teaspoon Harissa paste (or hot chili sauce)
  • 0.5 teaspoon Paprika
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

In a medium mixing bowl, combine the Greek yogurt, olive oil, lemon juice, minced garlic, harissa paste, paprika, salt, and black pepper. Mix until well combined to form the spicy dressing.

Step 2

Add the imitation crab meat or cooked lump crab meat to the bowl with the dressing. Fold gently until the crab is coated evenly. Set aside.

Step 3

Prepare the whole-grain tortillas by lightly warming them in a dry skillet or wrapping them in a damp paper towel and microwaving for 10 seconds to make them pliable.

Step 4

Lay each tortilla flat on a clean surface. Evenly distribute the arugula leaves onto each tortilla as the base layer.

Step 5

Add the julienned cucumber and carrot evenly on top of the arugula.

Step 6

Spoon the spicy crab mixture onto each tortilla, distributing it evenly across all four wraps.

Step 7

Sprinkle freshly chopped parsley on top of the crab mixture for added freshness.

Step 8

Starting at one end, tightly roll the tortilla into a wrap. Use a sharp knife to slice each roll into bite-sized pieces or serve whole as a wrap.

Step 9

Serve immediately or wrap in parchment paper and refrigerate for up to 4 hours for a chilled option.
