  • 1 medium Onion (chopped)
  • 3 cloves Garlic (minced)
  • 3 medium Carrots (sliced into 1/2-inch rounds)
  • 1 large Red bell pepper (diced)
  • 14.5 ounces Crushed tomatoes (canned)
  • 3 cups Beef or vegetable broth (low-sodium)
  • 1 teaspoon Paprika
  • 1 teaspoon Ground cumin
  • 0.25 teaspoon Ground cinnamon
  • 0.5 teaspoon Red pepper flakes
  • 2 medium Zucchini (cut into half-moons)
  • 0.5 cup Kalamata olives (pitted and sliced)
  • 0.25 cup Fresh parsley (chopped)

Directions

Step 1

Heat the olive oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat.

Season the beef cubes with salt and black pepper. Add the beef to the pot in batches, searing it on all sides until browned. Remove the beef from the pot and set aside.

Reduce the heat to medium and add the chopped onion to the pot. Cook for 5 minutes, stirring occasionally, until softened.

Stir in the Kalamata olives and cook for 5 more minutes to heat through.
