  • 1 teaspoon Ground coriander
  • 1 small Cinnamon stick
  • 1 teaspoon Paprika
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon Fresh rosemary (optional, finely chopped)
  • 2 Bay leaves
  • 2 cups Chicken or vegetable stock
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper (freshly ground)
  • 2 tablespoons Fresh parsley (chopped, for garnish)

Directions

Step 1

Heat the olive oil in a heavy-bottomed pot or Dutch oven over medium heat.

Add the chopped onions and sauté until golden brown, about 5-7 minutes.

Stir in the minced garlic and grated ginger. Cook for another 1-2 minutes until fragrant.

Add the pureed tomatoes and cook for 8-10 minutes, stirring occasionally, until the oil begins to separate.
