Ingredients

  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 8 whole wheat soft tortillas
  • 2 small cucumbers, diced
  • 1 cup cherry tomatoes, halved
  • 0.5 red onion, finely sliced
  • 0.5 cup Kalamata olives, pitted and sliced
  • 0.5 cup feta cheese, crumbled
  • 0.25 cup fresh parsley, chopped
  • 0.75 cup plain Greek yogurt
  • 1 teaspoon lemon zest

Directions

Step 1

In a large mixing bowl, combine the olive oil, lemon juice, minced garlic, oregano, cumin, salt, and black pepper to create a marinade.

Add the chicken breasts to the bowl and coat them well. Cover and marinate in the refrigerator for at least 30 minutes, preferably up to 2 hours.
