Ingredients

  • 2 medium aubergines (eggplants)
  • 2 large garlic cloves

  • 1 teaspoon ground cumin
  • 0.5 teaspoon sea salt
  • 0.25 teaspoon freshly ground black pepper
  • 2 tablespoons fresh parsley
  • 2 tablespoons pomegranate seeds (optional for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Pierce the aubergines with a fork several times and place them on a baking sheet. Roast in the oven for 35-40 minutes or until the skin is charred and the flesh is tender, turning occasionally.

Once cooked, remove the aubergines from the oven and let them cool until they're easy to handle.

Cut the aubergines in half lengthwise and scoop out the flesh, discarding the skin. Place the flesh into a mixing bowl.
