Ingredients

  • 400 grams fresh spinach
  • 2 tablespoons extra virgin olive oil

  • 1 medium lemon

  • 0.25 teaspoon freshly ground black pepper
  • 2 tablespoons pine nuts
  • 50 grams feta cheese

Directions

Step 1

Rinse the fresh spinach thoroughly under cold water and trim any long stems.

Step 2

Peel and thinly slice the garlic cloves.

Step 3

Juice the lemon and set aside. You will need about 2 tablespoons of lemon juice.

In a large non-stick skillet or wok, heat the extra virgin olive oil over medium heat.
