Ingredients

  • 2 medium Zucchini
  • 1 large Red bell pepper
  • 1 large Yellow bell pepper
  • 1 large Red onion
  • 1 pint Cherry tomatoes
  • 3 tablespoons Olive oil
  • 3 large Garlic cloves
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried thyme
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 medium Lemon
  • 2 tablespoons Fresh parsley

Directions

Step 1

Preheat your oven to 425°F (220°C).

Step 2

Wash and dry all the vegetables. Cut the zucchini into half-moon slices, the bell peppers into strips, and the red onion into wedges.

Step 3

Peel and finely mince the garlic cloves.

Step 4

In a large mixing bowl, combine the zucchini, bell peppers, red onion, cherry tomatoes, minced garlic, olive oil, dried oregano, dried thyme, salt, and black pepper. Toss everything together until the vegetables are evenly coated with the oil and herbs.
