Ingredients

  • 4 medium beets
  • 2 tablespoons extra virgin olive oil
  • 0.5 teaspoons sea salt
  • 0.25 teaspoons black pepper
  • 1 tablespoon fresh thyme
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons parsley

Directions

Step 1

Preheat your oven to 400°F (200°C).

Trim the green tops and roots of the beets, and wash the beets thoroughly to remove any dirt.

Step 3

Place each beet on a piece of aluminum foil and drizzle with olive oil.

Step 4

Sprinkle a little sea salt and black pepper over each beet, then add some fresh thyme leaves.

Wrap each beet tightly in the foil to create a sealed pouch.

Place the foil-wrapped beets on a baking sheet and roast in the oven for about 60 minutes or until the beets are tender. You can check tenderness by inserting a fork or skewer through the foil – it should go in easily.
