Ingredients

  • 500 grams small red potatoes
  • 3 tablespoons extra virgin olive oil

  • 1 medium zucchini
  • 1 small red onion
  • 3 large garlic cloves
  • 100 grams baby spinach
  • 1 medium lemon
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 1 teaspoon dried oregano
  • 50 grams feta cheese (optional)

Directions

Step 1

Wash and scrub the potatoes. Slice them into thin rounds, approximately 1/4 inch thick.

Step 2

Core and dice the red bell pepper. Slice the zucchini into half-moons. Finely chop the red onion. Mince the garlic cloves.

Step 3

In a large non-stick skillet, heat 2 tablespoons of extra virgin olive oil over medium heat.

Step 4

Add the sliced potatoes to the skillet, season with a pinch of salt and pepper, and sauté them for about 10 minutes, stirring occasionally, until they start to become golden brown and tender.
