Ingredients

  • 2 pieces boneless, skinless chicken breasts
  • 3 tablespoons extra virgin olive oil

  • 1 tablespoon red wine vinegar
  • 2 cloves garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 head romaine lettuce, chopped
  • 1 medium cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 0.5 small red onion, thinly sliced
  • 0.5 cup kalamata olives, pitted and sliced
  • 0.5 cup feta cheese, crumbled
  • 0.25 cup fresh parsley, chopped

Directions

Step 1

Preheat oven to 375°F (190°C).

Step 2

Place the chicken breasts in a baking dish and brush with 1 tablespoon of olive oil. Season with salt and pepper.

Bake for 18-20 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
