Chop the turkey bacon into bite-sized pieces and set aside.
Dice the red bell pepper and zucchini, and cut the cherry tomatoes in half.
In a large skillet, heat the olive oil over medium heat. Add the turkey bacon to the skillet and cook until crispy, about 5-6 minutes. Remove the bacon from the skillet and set aside.
