Ingredients

  • 2 tablespoons olive oil
  • 4 medium small new potatoes
  • 4 slices turkey bacon
  • 6 large eggs
  • 2 tablespoons milk
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 cup cherry tomatoes
  • 2 cups baby spinach
  • 0.5 cup crumbled feta cheese
  • 2 tablespoons fresh parsley

Directions

Step 1

Heat 1 tablespoon of olive oil in a large non-stick skillet over medium heat.

Step 2

Wash and cube the potatoes into bite-sized pieces. Add them to the skillet and sauté with a pinch of salt until golden brown and tender, about 10-12 minutes, stirring occasionally.

Step 3

In another small skillet, add turkey bacon slices and cook them until crispy. Remove, chop into bite-sized pieces, and set aside.

Step 4

While the potatoes and bacon are cooking, beat the eggs with milk, salt, and pepper in a large bowl until well combined.

Step 5

Halve the cherry tomatoes and set aside. Roughly chop the fresh parsley, reserving for garnish.

Once the potatoes are done, push them to one side of the skillet, add the remaining 1 tablespoon of olive oil to the cleared side.
