Ingredients

  • 500 g ground beef or lamb
  • 1 medium, grated zucchini

  • 3 minced garlic cloves
  • 2 tbsp, chopped fresh parsley
  • 2 tbsp, chopped fresh mint
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 large egg
  • 50 g whole wheat breadcrumbs
  • 1.5 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp olive oil

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the ground beef or lamb with the grated zucchini, grated carrot, chopped red bell pepper, and chopped red onion.

Add the minced garlic, chopped parsley, chopped mint, dried oregano, ground cumin, and ground coriander to the bowl and mix well.
