Ingredients

  • 2 tablespoons extra virgin olive oil
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1 pound ground beef, lean
  • 14.5 ounces canned diced tomatoes
  • 2 tablespoons tomato paste
  • 1 cup water
  • 1 medium red bell pepper, diced
  • 1 medium zucchini, diced
  • 2 cups baby spinach
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 0.5 teaspoon cinnamon
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup fresh parsley, chopped
  • 2 tablespoons lemon juice

Directions

Step 1

Heat the olive oil in a large skillet over medium heat.

Step 2

Add the chopped onion and sauté for about 5 minutes until translucent.

Step 3

Add the minced garlic and cook for another minute, until fragrant.

Step 4

Increase the heat to medium-high and add the ground beef. Cook, breaking it apart with a spatula, until it is browned and no longer pink, about 8-10 minutes.

Step 5

Drain excess fat, if necessary, and return the skillet to the heat.

Step 6

Stir in the diced tomatoes, tomato paste, and water. Mix until well combined.

Step 7

Add the red bell pepper, zucchini, cumin, coriander, cinnamon, and oregano. Stir to combine.

Step 8

Bring the mixture to a simmer, then reduce the heat to low. Cover and let it stew for 20 minutes, stirring occasionally.

Step 9

Remove the lid and stir in the baby spinach. Cook for another 5 minutes until the spinach is wilted.

Step 10

Season the stew with salt and black pepper to taste.

Step 11

Finish the dish with fresh parsley and a squeeze of lemon juice just before serving.

Step 12

Serve hot with whole grain bread or over brown rice for a complete meal.
