  • 15 ounces canned crushed tomatoes

  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 0.5 teaspoon ground turmeric
  • 0.25 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup chicken broth
  • 0.25 cup fresh cilantro
  • 1 tablespoon fresh lemon juice
  • 15 ounces chickpeas
  • 2 cups baby spinach

Directions

Step 1

Dice the chicken breasts into bite-sized pieces and set aside.

Step 2

Heat the olive oil in a large pan over medium heat. Add the diced chicken and cook until browned and cooked through, about 6-7 minutes. Remove the chicken from the pan and set aside.

Chop the onion and mince the garlic cloves. Dice the red bell pepper and zucchini.
