Ingredients

  • 3 tablespoons Olive oil
  • 1 pound Lean beef sirloin
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 large Onions, thinly sliced
  • 1 tablespoon Balsamic vinegar
  • 3 Garlic cloves, minced
  • 1 tablespoon Fresh rosemary, chopped
  • 1 tablespoon Fresh thyme, chopped
  • 1 cup Cherry tomatoes, halved
  • 0.5 cup Low-sodium beef broth
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Slice the beef sirloin into thin strips, approximately 1/4 inch wide, to assure even cooking.

Step 2

In a large skillet over medium heat, add 1 tablespoon of olive oil.

Step 3

Add the beef strips, season with salt and pepper, and cook until browned on all sides, about 5-7 minutes. Remove the beef from the pan and set aside.

Step 4

In the same skillet, add the remaining 2 tablespoons of olive oil and sliced onions.

Step 5

Cook the onions over medium heat for approximately 10-15 minutes, stirring occasionally, until they are deeply caramelized and golden brown.

Step 6

Once the onions are caramelized, add the minced garlic and cook for an additional 1 minute, until fragrant.

Step 7

Deglaze the pan with balsamic vinegar, scraping up any brown bits from the bottom of the skillet.

Step 8

Return the beef to the skillet, along with fresh rosemary and thyme, stirring to combine well with the onions and garlic.

Step 9

Add the cherry tomatoes to the skillet and pour in the beef broth. Stir everything together, then reduce the heat to low.

Step 10

Cover the skillet and simmer for about 10 minutes to allow the flavors to meld and the tomatoes to soften slightly.

Step 11

Taste and adjust seasoning with more salt and pepper if necessary.

Step 12

Garnish with fresh parsley before serving. Enjoy!
