  • 1.5 pounds beef sirloin tips
  • 2 tablespoons olive oil
  • 3 pieces garlic cloves, minced
  • 1 medium red onion, sliced
  • 1 large red bell pepper, sliced
  • 1 large green bell pepper, sliced
  • 1.5 cups cherry tomatoes, halved
  • 0.5 cup kalamata olives, pitted and sliced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup beef broth
  • 0.25 cup fresh parsley, chopped
  • 4 pieces lemon wedges

Directions

Step 1

Start by preparing the ingredients: slice the beef sirloin tips into bite-sized pieces, mince the garlic, and slice the onions and bell peppers.

Step 2

In a large skillet over medium-high heat, warm 1 tablespoon of olive oil. Add the beef tips and sear them until browned on all sides, about 5 minutes. Remove from the skillet and set aside.

Step 3

In the same skillet, add the remaining 1 tablespoon of olive oil. Sauté the garlic, sliced red onion, red and green bell peppers until they are soft, about 5 minutes.

Add the cherry tomatoes to the skillet and continue to cook for another 3 minutes until they start to soften.
