Ingredients

  • 1 pound fresh asparagus
  • 2 tablespoons olive oil
  • 3 unit garlic cloves, minced
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh lemon juice
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Wash and trim the woody ends of the asparagus. To do this, gently bend each asparagus stalk until it naturally snaps; discard the woody ends.

Step 2

In a large skillet, heat the olive oil over medium heat.

Step 3

Add the minced garlic to the skillet and sauté for about 1 minute or until fragrant, being careful not to let it burn.

Step 4

Add the asparagus to the skillet and cook, stirring occasionally, for about 5-7 minutes or until the asparagus is tender-crisp.

Step 5

While the asparagus is cooking, zest the lemon and set aside 1 teaspoon of zest.

Step 6

Juice the lemon to measure 1 tablespoon of juice and set aside.

Step 7

Once the asparagus is cooked to your desired tenderness, add the lemon zest, lemon juice, salt, and black pepper to the skillet. Stir well to coat the asparagus.

Step 8

Remove the skillet from heat and sprinkle the chopped fresh parsley over the asparagus.

Step 9

Serve immediately, enjoying this fresh and flavorful Mediterranean-inspired dish.
