Rinse the sushi rice in cold water until the water runs clear, then drain well.
Combine the rinsed rice with 1.25 cups of water in a saucepan. Bring to a boil over medium-high heat, then reduce heat to low and cover. Cook for about 20 minutes, or until the rice is tender and water is absorbed. Remove from heat and let it sit, covered, for 10 minutes.
In a small bowl, mix rice vinegar, olive oil, and salt until well combined.
Transfer the cooked rice into a large bowl and gently fold in the vinegar mixture using a wooden spoon or rice paddle, being careful not to crush the rice. Let it cool to room temperature.
While the rice is cooling, cut the cucumber into thin matchsticks and set aside.

Garnish each piece with a couple of cucumber matchsticks, a small pinch of lemon zest, and a sprig of dill on top (if using).
