Ingredients

  • 500 grams salmon fillets
  • 60 grams breadcrumbs
  • 1 large egg
  • 0.5 red onion, finely chopped
  • 2 garlic cloves, minced
  • 30 grams fresh parsley, chopped
  • 1 tablespoon lemon zest
  • 20 grams Capers, rinsed and chopped
  • 50 grams black olives, pitted and chopped
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil

Directions

Step 1

Preheat your oven to 200°C (392°F) and line a baking sheet with parchment paper.

Step 2

If using raw salmon fillets, poach them first, then let them cool and flake the salmon into a mixing bowl. If using canned salmon, drain and flake it directly into the bowl.

Step 3

To the salmon, add breadcrumbs, beaten egg, finely chopped red onion, minced garlic, chopped parsley, lemon zest, chopped capers, and black olives.

Step 4

Season the mixture with salt and black pepper. Mix well until all the ingredients are thoroughly combined.

Step 5

Divide the mixture into 8 equal portions and shape each portion into a patty about 1.5 inches thick.

Step 6

Heat olive oil in a large non-stick skillet over medium heat. Once the oil is hot, add the patties in batches, being careful not to overcrowd the pan.

Step 7

Cook the patties for about 3-4 minutes per side or until they are golden brown and cooked through.

Step 8

Transfer the cooked salmon patties to the prepared baking sheet and place them in the oven for an additional 5 minutes to ensure they are heated through.

Step 9

Serve warm, garnished with extra parsley and lemon wedges, if desired. They pair well with a fresh green salad or roasted vegetables.
