Ingredients

  • 1 whole Rotisserie chicken
  • 1 cup Cherry tomatoes
  • 1 medium Cucumber
  • 0.5 medium Red onion
  • 0.5 cup Kalamata olives
  • 0.5 cup Feta cheese
  • 4 cups Baby spinach
  • 0.25 cup Extra virgin olive oil
  • 2 tablespoons Lemon juice
  • 1 clove Garlic
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Remove the skin from the rotisserie chicken and shred the meat into bite-sized pieces. Set aside in a large salad bowl.

Step 2

Halve the cherry tomatoes and add them to the bowl with the chicken.

Peel and deseed the cucumber, then dice it into small cubes and add it to the salad bowl.
