Ingredients

  • 2 pounds Yukon Gold potatoes
  • 3 tablespoons Extra virgin olive oil
  • 4 units Garlic cloves, minced
  • 1 tablespoon Fresh rosemary, chopped
  • 1 tablespoon Fresh thyme leaves
  • 1 teaspoon Lemon zest
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Parsley, chopped (for garnish)

Directions

Step 1

Preheat the oven to 425°F (220°C).

Step 2

Wash and scrub the Yukon Gold potatoes thoroughly. Pat them dry with a towel.

Step 3

Cut the potatoes into evenly-sized 1-inch cubes to ensure even roasting.

Step 4

In a large mixing bowl, combine the olive oil, minced garlic, chopped rosemary, thyme leaves, lemon zest, salt, and black pepper.

Step 5

Add the potato cubes to the bowl and toss them gently but thoroughly to coat each piece with the herb and oil mixture.

Step 6

Spread the coated potatoes in a single layer on a large baking sheet. Use parchment paper or lightly grease the tray to prevent sticking.

Step 7

Roast the potatoes in the preheated oven for 30-35 minutes, or until they are golden and crispy on the outside and tender on the inside. Flip the potatoes halfway through the cooking time to ensure even browning.

Step 8

Remove the potatoes from the oven when done and transfer them to a serving dish.

Step 9

Garnish with freshly chopped parsley and serve warm.
