Ingredients

  • 3 large Red bell peppers
  • 2 large Garlic cloves
  • 2 tablespoons Extra virgin olive oil
  • 1 tablespoon Red wine vinegar
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.5 teaspoon Ground cumin
  • 1 tablespoon Lemon juice
  • 2 tablespoons Fresh parsley

Directions

Step 1

Preheat your oven to 425°F (220°C).

Step 2

Wash and dry the red bell peppers, then place them on a baking sheet lined with aluminum foil.

Step 3

Roast the peppers in the preheated oven for 20-25 minutes, turning occasionally, until the skin is charred and blistered.

Step 4

Meanwhile, peel the garlic cloves and set them aside.

Step 5

Once the peppers are roasted, remove them from the oven and place them in a sealed plastic bag or a covered bowl to allow them to steam for about 10 minutes. This helps peel off the skin easily.

Peel the charred skin from the peppers, remove the stems and seeds, then roughly chop the peppers.
